INTRO: Australian culinary star opens his first oversea restaurant outside Tokyo. Australian culinary star Bill Granger opens his first overseas restaurant at a seaside city of Shonan, outside Tokyo.


STORY: Celebrity chef Bill Granger hopes to woo Japan's notoriously picky diners with a new seaside restaurant outside Tokyo that serves his signature dish -- scrambled eggs. The Australian chef, known for his cookbooks and television series, modelled his first restaurant outside Sydney along a casual beach house, with wooden floors and ceilings, white walls, and a deck facing the sea. 

The laid-back, relaxed feel is reflected in Granger's cooking, especially the breakfast dishes that made him famous. He believes this is what will set him apart from the thousands of other upmarket restaurants in greater Tokyo. 

He trained a Japanese chef who will cook at bills in Japan, and will continue to visit the restaurant every couple of months. The menu is the same as at bills in Sydney, but incorporates local produce, such as vegetables from the nearby market. 

Granger describes bills as a cross-over between a neighbourhood restaurant and fine dining. A household name in Britain because of his television show, he could easily have picked London for his first overseas venture. But he said he chose Japan because of a particular affinity with the place. 

"Japan has always had a really special place in my heart. Before I opened bills 15 years ago, I spent 4 months here and that really inspired me," he said, citing the simple yet sophisticated beauty of Japanese food and design. 

Shonan beach, a popular summer getaway for busy Tokyoites, is more than an hour's drive from central Tokyo. 

Most Japanese who participated a tasting party reacted positively when it came to its taste, but opinions were divided when the question was whether the restaurant will take root in japanese society or to be just short-lived fashion.
